Eric Opoku is a Ghanaian politician and the current Minister of Food and Agriculture. A member of the National Democratic Congress, he has served as the Member of Parliament for the Asunafo South constituency since 2013, having previously held the seat from 2005 to 2009. Before his ministerial appointment in 2025, he served as the Deputy Brong Ahafo Regional Minister and held various committee roles in Parliament, including the Food, Agriculture and Cocoa Affairs Committee. He is a trained agriculturist and former educator.
